What’s for dinner? 30 minute menus for 2010 – 42nd edition

This is the 42nd edition of the 30 minute weekly menus for 2010. I like to make the weekly menus on Thursday or Friday, do the shopping on Saturday and start the weekly menus on Sunday.

Is it cold (or maybe cold) where you live? It’s very cold here in Atlanta. We have had a wonderful fall with cool mornings and crisp days. You’ll find menus that reflect the cooler climate with more substantial food being served. I have also included fresh seasonal fruits and vegetables.

This week’s menus will help you save time and money with the Slow Cooker Turkey Breast with Herb Wine Sauce, which makes two great meals for your family. There will also be turkey for those delicious turkey sandwiches! The meatball stew comes with its own bread bowls. How fun it is to eat everything including the bowl. Your family will simply love them.

The Saturday menu of pesto chicken with linguine is easy enough for the family but special enough for company fare. I’m hosting a dinner this Saturday for some friends. The appetizer course will be a wonderful start to this meal. It will consist of: Round Brie and a wedge of mild cheddar cheese with pomegranate and blueberry chutney; Dough; Escarole, Asparagus, Bell Peppers and Melon with Artichoke Pesto; mini whole wheat toast and plain crackers; Gourmet Kalamata Olives. If you have pesto left over from the chicken main course, just add it to the appetizer buffet!

You will find that I use various cooking methods, mix and match, to get dinner on the table fast! (Ingredients in parentheses show some of my quick prep steps.) You can always substitute your favorite made-from-scratch recipes when you have more time.

Turkey Breast with Herb Wine Sauce (crock pot; save some turkey for Wednesday)
Mashed Potatoes (Frozen Steamed Mashed Potatoes)
Green beans
Pecan Pies (store-bought pecan pies, whipped cream topping; save some topping for Monday)

Monday:
Ravioli Mediteranea (vegetarian; store-bought ravioli, jarred pasta sauce, grated cheese)
fresh green beans
Heavenly Angel Food Cake (store bought angel food cake, strawberry jam, whipped cream topping)

Tuesday:
Meatball stew (frozen meatballs)
Bread bowls (chilled cookies)
Fruit Salad with Yogurt Dressing (store bought yogurt, canned mandarin oranges, pear slices, and pineapple; buy extra pineapple for Wednesday and Friday)
Buckeye Chocolate Chippers (prepared cookie dough, canned chocolate glaze)

Wednesday:
Hot Turkey Salad (Sunday turkey; canned chutney, canned pineapple, bagged salad greens)
Sliced ​​apples with grapes
Chocolate Nut Toffee (boxed graham cracker crumbs, chocolate bites)

Thursday:
Tuscan Pasta (boxed pasta, canned cannellini beans, grated cheeses)
Sliced ​​tomatoes (buy extra tomatoes for Saturday)

Peach Macaroni Cups (canned peaches, store-bought macaroni cookies; buy extra peaches for Saturday)

Friday:
Spicy Redfish with Pineapple Salad (bagged salad mix, jarred salad dressing, canned pineapple)

Saturday:
Chicken pesto (boneless skinless chicken breasts, jarred pesto, or jarred pasta sauce if your family doesn’t like pesto)

Caprese Salad (Italian dressing in a jar)
Peach Crisp (canned peaches)
