Balinese traditional food

Bali has many types of traditional foods that are very spicy and very varied. Balinese still keep their traditional food, especially in Balinese temple ceremony, Balinese birthday otonan, Balinese wedding or when receiving a special guest. I am going to list some of the popular traditional Balinese foods.

1. Babi Guling (Suckler)

Milk pee is very famous in Bali, almost all Balinese favourites. The lactating udder is full-bodied roasted with a variety of spices. It is usually prepared for the temple ceremony, Galungan Day or Balinese Ceremony. However, the Balinese often keep pigs behind the house, feeding on leftover food, during that important time when they will be killed and eaten. If you think that suckling pig in Bali is exclusively traditional Balinese food that can only be found in Bali, you are dead wrong, because I found a list that Balinese suckling pig is already international food (Esquire Oct 2007 issue, page 72) and One of my favorite suckling pig warung in Ubud called Bu OKA list on it.

2. Ayam Betutu

Ayam betutu is Balinese spice mix chicken, the spices consist of coconut oil, turmeric, ginger, nutmeg, onion, garlic, cassava or salam leaves, and chillies. All the spices are mixed and put with the chicken. Ayam betutu is also served at Balinese ceremonies such as otonan, odalan or weddings. Ayam betutu is served with side dishes such as crispy fried peanuts and nice kankung (water spinach with spicy sauce). First, Ayam betutu is very popular in Gilimanuk (many restaurants serve ayam betutu), but now Ayam betutu can be found everywhere.

3. Jukut Ares

It is made with plantain trees mixed with pork ribs and meat, usually the color is dark yellow. Usually jukut ares is a suckling pig side dish, it is a kind of small bowl of soup. The flavor is pungent, and Ares is cut into very small pieces and mixed with a variety of spices.

4. Jukut Urab

Jukut arab is a vegetable mix of bean sprouts, coconut, long beans and no meat. Sometime Balinese people add brown sugar to have a sweet taste and they always put some chili to make a bit spicy.

5. Pepes

Pepes are a shellfish (it can be fish or shrimp as the main ingredient) wrapped in a coconut leaf and grilled in a few minutes. Usually found in the Klungkung area, pepes are famous for their special traditional Balinese seafood cuisine. The name of the area that sells a variety of traditional Balinese seafood such as Pepes, Sate lilit (coconut fish satay mix), fish soup, is called Pesinggahan, located near the tourist object Goa Lawah in Klungkung Regency.

6. Tum

Tum is almost similar with Pepes, but the way of cooking is different, if Pepes is grilled for a few minutes, Tum is steamed for a few minutes. It usually combines minced pork or chicken, spices, and young fruit. But now in Tum there could be more variety, as for vegetarians, there is Tum made only with mushrooms or vegetables. Tum can be easily found in any traditional market or traditional Balinese warung.

7. Urutan (Balinese sausages)

Urutan or Balinese sausages usually found in suckling pig warung. It is made from pork casings stuffed with pork and spices. The urutan is fried until it is brownish yellow. The surface of Urután is not smooth like Western sausages as it contains bits of meat and fat.
