What’s for dinner? 30 Minute Menus for 2010 – 1st Edition

Happy New Year to each and everyone! I hope you are off to a good start to the new year. This is the 1st edition of the 30 minute weekly menus for 2010. These weekly menus are published weekly; I like to develop the weekly menus on Thursday or Friday, do the shopping on Saturday and start the menus for the week on Sunday.

To help budget after the holiday season, I’ve included a bake once – eat 4 menu plan. Don’t worry if your family gets tired of ‘ham’ again! because each menu is quite different from the others, so your family won’t even notice that you are saving money and time by serving ham multiple times this week. Ham is so versatile; You can change the menus to suit your family’s favorites like Ham and Beans, Ham and Cheddar Panini, Chef’s Salad, and the list goes on.

Our family New Years celebration will be on Sunday when I will serve a fully cooked spiral sliced ​​ham. I’ll also be serving Hoppin ‘John (canned black-eyed peas with diced onion over instant rice) to keep our New Years tradition going. We will start with an appetizer plate of round brie cheese and a slice of mild cheddar cheese; Cake shop; endive, asparagus, bell peppers and melon; artichoke pesto and blueberry pomegranate chutney; mini whole wheat toast and crackers; Gourmet Kalamata olives.

You will find that I use various cooking methods, mix and match, to make dinner quickly! (The ingredients in parentheses show some of my quick preparation steps.) You can always substitute your favorite recipes made from scratch when you have more time.

Friday:

Baked Fish Italianio (bottled sun dried tomato salad dressing, baby spinach in extra Wednesday bags)
